French Onion Soup

Making French Onion Soup. This recipe.

1. Bought too many onions. Then cut up only half (plus a shallot!), because even the correct amount seemed like too much. Once they had carmelized ... I decided I should have cut up more.

2. Decided, since I have lots of onions, to just add 1/2 the stock. Assuming the soup is good, I'll use the rest of the onions and stock later.

3. Currently simmering.

4. ... and my broiler setting doesn't seem to do anything. Hmm. So we have melted cheese, but not really browned.

Final judgment: Good, but not the greatest ever. I'll have to make another recipe to compare.
